Let yourself be tempted by a cod steak and its leek fondue, a simple and effective recipe to be eaten without moderation. Nothing like a little lightness to start the year!
Cod steak and its leek fondue
Ingrédients
For 4 persons :
6 leeks
2 shallots
50 grams of butter
150 ml of liquid cream
4 cod steaks
Salt, pepper, olive oil and lemon juice
Présentation
1Make a mixture of salt, pepper and lemon juice for a marinade then marinate the cod steaks in this mixture just before cooking.
2Wash and peel shallots and leeks in slices.
3In a saucepan, melt the butter and shallots over medium heat with a pinch of salt.
4Carefully add the sliced leeks to the pan and leave to cook for 10 minutes.
5Pour in the whole liquid cream and a little pepper, cook for another 5 minutes.
6In a frying pan, pour a base of olive oil and place your cod steaks. Cook for 4 to 5 minutes over high heat until the skin is coloured.
7In a plate, make a bed of leek fondue and place the codfish steak on top.
This simple and effective recipe will go perfectly with a white wine from Domaine Bellier AOP Cheverny 2019.
