Guillon Distillery
Located in the heart of the Montagne de Reims Regional Natural Park, the Guillon Distillery has been producing since 1997 a malt-based spirit with a unique and 100% French taste: The spirit of the malt of the Montagne de Reims.
History:
In 1997 Thierry Guillon, an oenologist by training, made his dream come true: to create a brand of 100% French spirits in Champagne.
He set up his first still in Louvois, a village located in the mountains of Reims, on a 13-hectare estate. It was a daring gamble and a success.
Today, the brand offers a range of 17 exceptional spirits, sold in nearly 2,400 cellars, served at the tables of the greatest restaurants (Royal Champagne, Les crayères, George Blanc) and referenced in the cellars of the most prestigious institutions (National Assembly, Senate, Elysée Palace).

The source: "It all starts with water. Its purity is the most important element for distilling a good spirit," says Thierry Guillon, and it is located on the Natura 2000 classified property.
It flows naturally by gravity from the top of the plateau to the distillery. It is filtered before being used by layers of white sand, natural geological formations in the subsoil.
Although it is located in a limestone massif, the water is not loaded with calcium because a layer of clay holds it above the chalk.
It is also very low in mineral salts (100 mg/l). It is this fineness that is sought after in the production of Esprit du Malt de la Montagne de Reims ®.
Cereals: Champagne is a very large barley producing region.
The barley transformed into malt becomes the first ingredient for the manufacture of Guillon spirits, this transformation is done in a malting plant located in Vitry-le-François. A key element in the elaboration, this quality malt allows us to obtain an alcohol of great finesse.
Know-how: first and foremost oenological know-how, thanks to the training of Mr Thierry Guillon, which allows for complex and refined blending.
But also a French know-how since all the barrels used for maturation are barrels that have been used to age great French wines. Guillon thus gets the best out of the talent of French winemakers.
