La Frittata Tomatoes and Basil
Do you know Frittata?
This traditional Italian dish is very easy to make!
We propose a tomato-basil version that is perfect for sharing as an aperitif or as a main course for gourmets.
- For 4 persons :
- 5 eggs
- 500 grams of tomatoes
- A shallot
- 1 clove of garlic
- 40 grams of parmesan cheese
- 20 large basil leaves, chopped
- 3 tablespoons of olive oil
- Salt
- Pepper
- 1Cut the cherry tomatoes in half
- 2Heat the olive oil in a large pan.
- 3Add the chopped garlic and the chopped shallot, then the halved tomatoes. Add a little salt and pepper. Leave to cook for 5 minutes, then remove from the heat and set aside.
- 4Beat the eggs into an omelette in a bowl.
- 5Add the tomatoes, basil and parmesan. Add salt and pepper and pour into the hot pan with 1 tablespoon of olive oil. Leave to cook for 10 minutes.
- 6Turn the frittata over with the help of a plate and let it brown for 3 to 4 minutes
- 7To serve, you can add halved cherry tomatoes, chopped basil and rocket.
This traditional Italian dish, similar to an omelette, is perfect with a glass of Brouilly from Château Saint Lager.
It is a light and greedy red wine, 100% Gamay, full of red and black fruits.
