Salmon steaks with citrus fruits
- For 2 persons :
- 2 salmon steaks
- 1/2 lemon
- 1/2 orange
- 13 g fresh ginger
- 2 sprigs of thyme
- 1/2 spoon of sugar
- 1 spoonful of rice vinegar
- 1 tablespoon of olive oil
- Salt and pepper
- 1Rinse your salmon steaks in cold water and drain.
- 2Sprinkle your salmon steaks with salt, pepper and thyme.
- 3Prepare your citrus fruits, wash them and finely remove the peel. Scald the peels for a few moments, drain them and rinse them in cold water.
- 4Squeeze the lemon and orange, mix the two juices and set them aside.
- 5Peel your ginger and grate it finely.
- 6In a large pan, pour in the vinegar, add the sugar and heat until your vinegar has evaporated and you have an amber caramel.
- 7Once the caramel is obtained, add the citrus juice, zest and ginger. Let it reduce and add the olive oil.
- 8Place your salmon steaks in the pan with the sauce and cook over a low heat for three minutes on each side. Enjoy!
